A staple in my home as a child. Zucchini is a summer vegetable common in many gardens where I'm from. Zucchini bread is often made and then frozen for later.

A staple in my home as a child. Zucchini is a summer vegetable common in many gardens where I'm from. Zucchini bread is often made and then frozen for later.
Steps

Combine all 5 ingredients in a large mixing bowl, stirring well.

Combine all purpose flour and next 9 ingredients, stirring well.
- 3
Add zucchini mixture, and blend together.
- 4
Spoon batter evenly into greased and floured 8x4x2 1/2 loaf pans.

Bake at 350 degrees F for 45 to 50 minutes or until a toothpick can be inserted and come out clean.

Cool pans for 10 minutes, remove from pans and allow to cool completely.
