Every country has different way to prepare this salad. We call “Russian Salad”, but we also know “Olivier” Salad assumingely originates with Belgian chef , and his recipe comes to the postSoviet Countries. Even Europe , Israel , Mongolia, and south America . Of course recipe varies country to country . They say in the original recipe salad contained , crayfish tail, veal tongue, duck, caviar, but who is going to find those? The cheapest and fastest way we are preparing this famous salad. I add beets, I liked the color of the salad become, I also used 2 eggs. Some recipes including bologna or chicken. But I never used any meat. You are welcome to create your own version. But I have never used can vegetables . They are so watery and mushy .i use frozen peas.

  • 1and 1/2 cup frozen peas
  • 1and 1/2 potatoes
  • 1large carrot
  • Pickled cucumber (kosher)
  • 2boiled eggs
  • 1/4 cupgrilled beet (optional)
  • 1/2 jarLight mayonnaise
  • 1/4 cupgreen onions
  • to tasteSalt

Steps

    Dice vegetables same size. Carrot., Potatoes.. beet.Green onions, pickles. Boiled hard the eggs.

    Boil potatoes and carrots together. Don’t overcook, all veggies have to be tender.10 mints or so. In Another pot, boil peas,

    Better if you cook vegetables night before.i kept them in the fridge, they are cold and dry.finally in a large mixing bowl mix everything, (beet, veggies, eggs, mayo)add salt mayo.

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
