Blackened Tilapia

My mother is from New Orleans and we grew up eating every kind of seafood. Since moving to North Louisiana she misses fried fish terribly. So blackening and searing seemed to be the best way to compensate for fresh fish.

My mother is from New Orleans and we grew up eating every kind of seafood. Since moving to North Louisiana she misses fried fish terribly. So blackening and searing seemed to be the best way to compensate for fresh fish.

Put just a little olive oil in a pan and get it hot

Sprinkle the blackening seasoning on one side of the filet

When the pan is hot enough to sear, put the filet seasoning side down, cook for about 2mins, edges will whiten
- 4
While the filet is cooking, and more blackening seasoning to the top side of the filet

Turn filet over with a spatula

Let cook another 2-3minutes
- 7
Remove from pan, top with a pat of butter and a few drops of lemon juice
- 8
Serve and enjoy!
