Baba dudu needs no introduction unless you were born in the 20th century 😁🤪. I licked a lot of this as a child while in primary school and it’s one candy you can not seem to get enough of!! Let me show you how it’s made.

First you need to crack open the coconuts and remove the flesh from the shell

Then blend the coconut flesh smooth with some water

Use a cheese cloth or sieve to sieve out the coconut juice into a bowl

You need just the coconut milk and not the water. So to extract the milk, what i do is place the bowl of juice in the freezer to solidify. Then i remove the top which is now mainly the coconut milk. As the water would have settled underneath

Place the coconut milk in a pot and add the pinch of salt

Add the sugar

Then place on low heat and start stirring with a wooden spatula. Do not leave it unattended as it can overflow and make a mess. So you have to continually stir

Continue stirring until it all begins to thicken and changes in color

Keep stirring until the oil starts to come out and scoop out the oil. Then stir until it changes to a very dark thick brown color

Scoop out more oil and pour on a clean slab, and allow to cool for 2-3 minutes.

Then start cutting and rolling inbetween your palms and leave to cool on the slab. Be very careful as it is usually very hot and dangerous.

Tie in prepared nylon wraps when completely cold
