Deep fry the potatoes.

Take a wok add refined oil. Then add heeng, rai. Crackle them. Now add chopped tomatoes. Then add all other spices except amchur and garam masala. Cook till oil separates.

Then add other vegetables and little amount of water. Cover with lid. When it is done then add fried potatoes, amchur and garam masala. Cook it for another 3-4 minutes. Ready to serve.
