First, clean the green peas and fava beans.

Cut the fava beans into small pieces and steam them together with the green peas.

In a large bowl, place the couscous and mix it with a little vegetable oil, working the oil in well. Then add about 1 cup (240 ml) of water or more, depending on the amount of couscous, until it feels slightly damp but not soaked. Let it rest until the water is absorbed.

Once the couscous has absorbed the water, fluff it well with your hands, then steam it for the first time by placing it in a couscous steamer over a pot of boiling water.

After the first steaming, transfer the couscous back to the bowl and sprinkle with a little more water, mixing until it feels heavier in your hands. Add salt, mix well, and let it rest until the water is absorbed.

If the peas and fava beans are already cooked, add them to the steamer with the couscous for the second steaming. Once the couscous is dry, steam it a second time over the heat.

When the couscous is done, transfer it to a bowl and mix in butter and a little olive oil if you like. Enjoy!
