Japanese Soufflé Pancakes

In a bowl, combine the 2 egg yolks, a pinch of salt, milk, and vanilla extract. Whisk well.

Add the flour and baking powder to the bowl and whisk until the batter is smooth and free of lumps.

In a separate bowl, beat the egg whites, gradually adding the sugar, until stiff peaks form.

Gently fold the beaten egg whites into the yolk mixture using a rubber spatula, being careful not to deflate the egg whites.

Once everything is combined, lightly grease a skillet with oil and cook the pancakes over low heat for 1.5 to 2 minutes per side.
