In a bowl, whisk the oil and vinegar with a generous pinch of sea salt and a few grinds of pepper.

Put the tomatoes in a flat dish. Pour the oil mix gently on top of the tomatoes. Put a couple of sprigs of rosemary in the dish.

Put the dish in the fridge for a couple of hours.

To serve, lift the tomatoes carefully out of the oil mix and serve. Season again if needed. The oil mix can be used as a dressing on the side. Enjoy 😋
