Gajrella another variation of kheer with carrots. One of the favourites of my mother in law. In winters gajrela is must in our breakfast. Very healthy and nutritious. Best combo with yogurt.

Steps

Soak rice for half an hour.

Wash, peel and kaddu kash carrots.

Take a deep pot add only half tsp ghee add elaichi rice without water and fresh grated carrots.

Stir for ten minutes on high flame.

Now add three litres milk.

Let it cook for at least two hours on a very low flame.

Stir time to time, it will not stick to the bottom.

Remove from flame till you get desired consistency like kheer. Neither liquidi nor too thick.

Garnish with pistachios.

Serve cold. Me and hubby love to have gajrela with fresh yogurt in breakfast.
