Ingredients

  1. 2Ripe Plantains/nendrapazham/ethapazham
  2. 2Eggs
  3. 4 tspSugar
  4. 1 pinchCardamom powder
  5. 3 tbspGhee
  6. 1 tbspCashewnuts

Cooking Instructions

    Peel & chop the plantain in medium size cubes. In a pan, add ghee & the chopped bananas and deep fry until it turns soft and golden brown. Transfer the fried plantains to a paper towel. In the same pan, add ghee and fry the cashewnuts. Drain them on a paper towel. In a bowl, mix the eggs lightly with sugar and cardamom powder using a fork.

    Add the remaining ghee to the pan, pour the lightly beaten eggs and scramble using a spoon. Add in the fried plantains and mix everything together. Serve hot as a snack.
