This sabji is under my first recipe category #ghar ka khanna#roj ka Khanna.Actually,this recip is for those who like ghiya...as it is very simple recipe and is made with very few ingredients.Trust me ,if you don't even like lauki,please try this very simple recipe....you can have it as a soup and it is very very good recipe for weight watchers .It is my son's favourite sabji.Even my daughter loves it ...but with some variations....I will share the variations also .

Ingredients

  1. 400 gmLauki(ghiya)
  2. 1/2 tspCumin seeds
  3. 1 tspCoriander powder
  4. 1/4 tspTurmeric powder
  5. As neededSalt and red chilli powder
  6. 11/2tspGhee(clarified butter)

Cooking Instructions

    Wash and cut lauki into medium thin slices.

    Heat ghee in a pressure cooker and add jeera...let it splutter.keep the flame very slow to prevent burning of the massala.

    Add dhania powder salt and haldi powder.Stir it for a second,add ghiya slices and stir for few dry on low flame,do that the ghiya gets coated with the massala

    Add 3/4cup water,mix gently and cover the lid of the pressure cooker.Cook on a medium to slow flame.Only one whistle is good enough to cook the lauki. Don't over cook it. It will not taste too good.

    Open the lid when all the pressure is released. Serve with hot chapaties and nimbu ka aachar.Since it is bland in taste nimbu ka aachar goes very well with this vegetable.

    Now for those who wants some spicy sabji.Heat ghee and let it cool,then add 1/2tsp of Kashmiri red chilli powder and mix.We call this as chounk or vaghaar. You can add more mirchi if you like.serve ghiya vegetable with some mirchi ka chounk over it. Believe me it will taste very good.

    Another variation is by adding... tomato (1medium),ginger julliens and one to two green chillies.

    For this..heat 1tbsp ghee.add little jeera,then add ginger julliens and slit green chillies,stir for few seconds.Add chopped tomatoes and stir for 30seconds. Add 1/2 tsp dhania powder and mix well for less than a minute. Be careful,it should not burn. Add 1/2tsp Kashmiri red chilli powder mix and add the cooked ghiya to it Don't add the rasa(the liquid of the vegetable) add only cooked ghiya. Mix gently.Can add little garam masala and a pinch of amchur powder. Serve hot.
