Separate the egg yolks from the egg whites. Discard the egg whites and place the egg yolks in a bowl.

Start beating the egg yolks at low speed; add the olive oil a drop at a time, fully incorporating the oil before adding the next tablespoon. It is essential to constantly beat the mayonnaise in the same direction while adding the olive oil, using a whisk (electric or manual), until it is well combined.

When the mayonnaise is firm, flavor it with salt and pepper and add in the lemon juice or vinegar. Mix.

This recipe makes around 2 cups of mayonnaise, it can be used immediately or stored covered in the refrigerator for no more than 2 days.
