Ingredients

  1. 1/4 bunchfresh mint
  2. 1/2 bunchpurslane
  3. 3large tomatoes
  4. 3cucumbers
  5. 1/4 bunchparsley
  6. 1/2red bell pepper
  7. 1/2yellow bell pepper
  8. 2lemons
  9. 2 tablespoonsolive oil
  10. 2 pinchesblack pepper
  11. 1/2 headlettuce
  12. 2carrots (grated)
  13. 1 tablespoonsumac
  14. 1/4 bunchthyme
  15. 1/4 buncharugula
  16. 5radishes
  17. pinchdried mint
  18. small pinch paprika
  19. 1 tablespoonpomegranate molasses
  20. 1 tablespoonyogurt
  21. 2chicken thighs
  22. Chicken marinade for baking:
  23. 1 tablespoontomato paste
  24. 1 clovegarlic
  25. 2 tablespoonsvinegar
  26. chicken seasoning
  27. 2 tablespoonslemon juice
  28. 2 tablespoonsvegetable oil

    Marinate the chicken thighs in the marinade for three hours.

    Place the thighs in a baking dish, add a cup of water to the dish, cover with aluminum foil, and bake in the oven at 350°F (180°C) for half an hour or less, depending on your oven's heat.

  3. 3

    For the fattoush, chop the previously mentioned vegetables and mix them together in a large bowl.

  4. 4

    Add the fattoush dressing made of olive oil, lemon juice, garlic, balsamic vinegar, 1 tablespoon pomegranate molasses, a pinch of sumac, a pinch of dried mint, and the remaining spices. Then add 1 tablespoon of yogurt, shake the mixture in a jar, and add it to the vegetables to make a delicious fattoush.
