Ingredients

60 minutes
Serves 6 servings
  • 2 cupspinto beans (about 400 grams)
  • 1/2onion
  • 2tomatoes
  • 1 pieceMexican chorizo sausage
  • 3.5 ozbacon (100 grams)
  • 1/2 lbpork cracklings (about 225 grams)
  • Cilantro
  • Dried arbol chiles
  • Coarse salt
  • 2 tablespoonsoil

Steps

60 minutes
  1. 1

    Soak the beans in hot water the day before and leave them overnight. The next day, cook them in a pressure cooker for 40 minutes.

    In a pot, heat the oil and fry the bacon. Add the chorizo and cook until browned, then add the onion and continue frying.

    Add the cooked beans with their broth, then add the tomatoes and bring to a boil. Season with salt and let simmer for 10 minutes. Add the pork cracklings, cilantro, and dried chiles. Simmer for another 10 minutes over low heat.

    Serve and enjoy.
