One of my favorite dishes, a traditional meal from Guadalajara. It's easy, quick, and very delicious.

This recipe is super easy. First, chop all the ingredients so everything is ready when you start cooking.

In a pot, add the bacon (no oil needed) and cook until it releases its fat and becomes crispy.

Once the bacon is ready, remove it from the pot, leaving the fat behind. In the same pot, add the beef and cook until browned to your liking.

While the beef is cooking, prepare the sauce: Blend the tomatillos, serrano peppers (adjust for desired spiciness), garlic, bouillon cube, and enough water for your preferred consistency.

Once the beef has released its juices and is cooked to your liking, add the sauce. Let it simmer for about 10 minutes.

While the beef is simmering, prepare the sides. In a separate skillet, add the cooked bacon and brown it again. Once crispy, remove the bacon and add the diced potatoes to the same bacon fat, along with the spring onions. Cook until golden.

When the beef has simmered and the flavors are well combined, turn off the heat and serve. Taste and add salt if needed while it's simmering.

To serve: Add cooked pinto beans (I cook them with garlic and onion) to a bowl. Add the beef with its juices, then top with the sides: crispy bacon, potatoes, spring onions, avocado, onion, radishes, and cilantro. Hope you enjoy it!
