Puran Poli Village Style

Puran Poli is a very liked and famous stuffed sweet flat-bread originally from Maharashtra. It is made and eaten in many ways in every different parts of the state. It is prepared in every Mahrashtrain bones on Gudi Padwa, Holi and mostly all occasions and Poojas.
I occasionally made this at home but, me and my family always like to enjoy the traditional Maharashtrian Village style Puran-Polis at dhabas.
The Puran Poli served there has a very little skin of dough and has a very plump quantity of stuffing, which makes it so delicious. When this generously stuffed puran poli is served with a big dollop of ghee, it tastes really heavenly.
Once I was secretly taken to the Sewagram Ashram, kitchen (located near Wardha) on special request and the chef there, taught me their method of making this poli.

Steps

Soak chana dal for 1 hour in Lukewarm water. Drain out the water and cook the dal in a pressure cooker til 3-4 whistles and till the dal becomes mushy.

Once done grind in a mixer jar to remove lumps. Add in a kadhai or non stick pan.

Switch on flame and add jaggery powder

Also add the sugar. Mix and cook well until the jaggery has dissolved completely

When the mixture is thick. Add cardamom powder and mix well.

Check here for sweetness and add as required. Add some ghee and keep mixing, everything will come together, when done.

It will form a dough. Let the mixture cool completely

In the meantime prepare Poli dough by mixing and kneading all ingredients mentioned under the poli section. Cover and let rest for 30 minutes.

Make small ball of puran and keep ready

Pinch a big lemon sized dough and roll elongated thin roti. Keep one ball in centre.

Cover the puran ball with the poli. With the help of a small katori/ cup cut the poli dough, without touching the poli ball. Remove extra dough.

Tap with fingers and roll out circular roti evenly by mildly pressing it.

Roast in hot tawa from both sides. Add ghee and serve hot.
