Ma’amoul معمول cookies is a kind of Arabic stuffed cookies made with semolina,and flour. It can be filled with a variety of nuts and fillings such as: walnuts, pistachio, almonds, dates, and figs.

Ma’amoul is one of the gorgeous and delicious cookies, full of flavor and aroma due to having spices such as cinnamon, cardamom, nutmeg, rose water/ orange blossom, ghee/ butter or coconut oil for vegans.

Ma’amoul normally served during celebrations in Middle East. Arab Muslims eat Ma’amoul on the Eid and Arab Christians and Greeks eat these cookies on the Easter.

This utterly scrumptious and buttery pastry or cookie can be made by hand or by wooden moulds. However, I have not those wooden moulds 😁😁 and I used my other kind of mould which I usually use for making my Chinese moon cakes and it is absolutely is fine👍👍.

Ingredients

  1. 1 1/2 cupplain flour (all purpose flour)
  2. 500 gsemolina
  3. 150 gGhee or butter, melted
  4. 1/2 cupsunflower oil
  5. 1/2 cuppowdered milk
  6. 1 cuppowdered sugar
  7. 1 tspnutmeg powdered
  8. 1/2 tspbaking powdered
  9. pinchsalt
  10. 1/4 cupmilk
  11. 1 tspvanilla extract
  12. 1 tspyeast
  13. 1 tspwhite sugar
  14. 1/4 cuplukewarm water
  15. 1/4 cuprose water
  16. Ingredients for fillings
  17. Date filling
  18. 500 gdates, deseeded
  19. 1 tspcinnamon
  20. 2 tbspveggie oil
  21. 1 tspcardamom powdered
  22. Pistachio filling
  23. 250 gpistachio, chopped or powdered
  24. 6 tbspsugar
  25. 3 tbspwater
  26. 1/2 tspcardamom
  27. Walnuts filling
  28. 200 gwalnuts, finely chopped
  29. 6 tbspsugar
  30. 3 tbspwater
  31. 1 tspcinnamon powder

Steps

    Ingredients

    In a big bowl, add semolina, melted Ghee and vegetable oil. Using your hand mix it. Make sure semolina is covered with ghee/butter and oil.

    Cover the bowl and leave it overnight.
    Next day semolina will be soften. Now, add flour, powdered sugar, powdered milk, baking powder, nutmeg and pinch of salt to the semolina.

    Mix until all ingredients are combined together.In next step, stir in sugar and yeast to lukewarm water. Wait for about 10-15 minutes, until surface of mixture becomes foamy.

    Now, add milk, rose water and yeast mixture to the semolina. Use your hand and combine all ingredients together

    And knead it until you have a soft dough like. Cover it and let to rest for 1 hour. After an hour, give ball shape to the ma’amul dough and set aside.

    In the meantime, we prepare the fillings. You can have one filling or collection of different fillings with nuts, date, or fig.

    Blend pitted dates together in a food processor. Add oil and spice. Mix until smooth. Roll it into small balls.

    Mix pistachio powder with sugar, cardamom and water. Make a paste and then give small ball shape to pistachio paste.

    Mix chopped walnuts with sugar, water and cinnamon. Make a paste and then give small ball shape to the paste.

    Now our different fillings are ready 👏👏

    Take one of dough balls. Using your thumb press a hole in the centre of each ball.

    Place one of fillings in the hole and then seal it and roll it into a ball again. put each filled ball gently into the mould and bang it against the counter to release it.

    If you do not have mould, you can give shape with different methods: a ring shape ma’amoul with following method:

    Roll the dough into a log shape. Press your fore finger on the dough as you see in the photos and make a shallow trough on the dough.

    Now fill the log with one of fillings and seal the dough.

    Bring two ends of the dough to each other and make a ring shape.

    Or Put the filled dough inside the Ice cream spoon and bang it against the counter.

    Another method is using a knife or fork and make a pattern on the dough as you see in the following photos.👇👇

    Arrange all the cookies with different fillings in the same way. Place all pastries on parchment lined baking sheet and bake at 200C degree for 15 minutes, until golden brown.
    Once cooled, sprinkle with powdered sugar and chopped pistachio.

You're welcome. I have not wooden mould for Ma'amoul cookies and that's why i used my mooncake mould. However shape and mould is different but taste is amazingly great :) thanks for your comment
