Versatile Savoury Rice
This super simple dish is my go to whenever I have to cook for fussy eaters - I just add whatever vegetables they may like although in this instance, all I was allowed to add were onions hence it looking quite plain.
You can also add cooked chicken or prawns to it to turn it into a main dish.
Versatile Savoury Rice
This super simple dish is my go to whenever I have to cook for fussy eaters - I just add whatever vegetables they may like although in this instance, all I was allowed to add were onions hence it looking quite plain.

Steps

Boil the rice for 10 mins and then rinse under cold running water until water runs clear.

In a high sided pan, heat the oil and then add the onions. Cook for 5 mins until softened and then add the other vegetables if desired.

Cook vegetables for another 3 mins and then add the rice, mixed herbs, salt and pepper and "fry" for a further 10 mins.

Add several glugs of soy sauce to the pan and coat the rice. Then add the mixed herbs and the chicken stock, about a cup and cover. Keep adding the chicken stock a little at a time until cooked the rice is cooked

Season with salt and pepper and then serve as a main dish or a side. 8
