Ingredients

30 minutes
4–5 plates
  • 2 1/4 lbsglutinous rice flour (about 1 kg; you can use regular glutinous rice flour or freshly milled rice flour if available, which is very easy to work with)
  • 7 ozsugar cubes (about 200 grams)
  • 1 1/2 tablespoonstoasted sesame seeds (about 20 grams)

    Prepare the flour and sugar.

    First, divide the dough into long ropes about 5/8 to 3/4 inch thick (1.5–2 cm), then cut them into pieces about the length of your fingertip. This helps make evenly sized dumplings. Roll each piece into a ball, flatten it, and place a sugar cube in the center. Repeat until all the dough is used.

    Drop each dumpling into a pot of boiling water.

    When the dumplings float to the surface, they are cooked. Remove them and place them in a bowl of clean water to prevent sticking.

    Transfer the dumplings to a plate. Finally, dip your wet fingertip into a bowl of toasted sesame seeds and dab some onto each dumpling to make them look more appealing.
