Besan Ke Ladoo

Besan Ke ladoo is very famous Indian sweet. It is made from Besan (chickpea flour), sugar, Desi ghee, raisins and saffron (for coloring). It is specially made in Hindu festivals like Diwali & New Year. Every new year my mother in law made this recipe & serve it to guests with some snacks. I learn this recipe from my Mother in law. She makes this ladoo in very unique way. It is very easy to make but little tricky. Generally in Besan Ke ladoo recipe people dry roast the chickpea flour and then add it into sugar syrap and make ladoo. But this recipe is very unique. In this recipe I make a dough from Besan after that make balls and deep fry it and add sugar syrup and ghee, mix it and make ladoo. This is very delicious and unique recipe. In Gujarat it calls (Lasa na ladoo, Taka ladva & Dhaba na ladoo).

Take a bowl.

Sieve chickpea flour into it.

By adding milk Knead a hard dough.

To Knead hard dough is very important in this recipe.

Now take a small part of dough and roll it into cylinder shape and using fingers make holes into it. (See in picture)

By using this step make rolls from whole dough.

Now take a pan.

Heat ghee into it. (For deep fry the rolls)

Flame should be not too high or not too low, it should be medium.

When ghee turns hot, dip fry all the rolls into it.

Dip fry until it turns into golden Brown.

After that remove it from ghee and let it cool down for few minutes.

Now using hand break all the rolls. (See in picture)

Now take a minute jar and make a fine powder from the broken rolls.

Sieve the powder and add raisins and cardamom powder.

Mix it well.

Keep it aside.

Now take a pan and add sugar into it.

Now add water till sugar deep.

Approximately 2-3 cup water, add more if require.

Now let sugar dissolve.

Flame should be low.

Stir it.

Heat it well and make sugar syrup until 2 threads are formed.

To check whether the threads are formed or not, take little syrup in spoon and using finger you can check it.

Now pour this mixture to fine powder and mix it very well.

Also add saffron threads, you can also add ladoo colour into it. (I have added little for orange colour)

Now first add 1 cup ghee and mix it with your hands.

After that add remaining ghee if require.

Make laddo dough by mixing all the ingredients very well.

Now using hands take a small part of ladoo dough and make round balls from it.

By using same steps make all ladoo.

Let it settle down for 10-20 minutes.

You can store this ladoo for 10 days.

Garnish it with cashews.

Serve it to your guests.
