Boil water

Add salt then add rice

Cook till most of the water evaporates then lower the heat then cover until cooked

Remove from heat and put aside

Separately put oil in a pan

Add the rice

Add the yellow and red capsicum, lemon zest and diced carrot

Season with salt and pepper to taste. Drizzle the lemon juice on top

Gently mix the rice with a large fork.

Serve immediately or cover it for sometime till ready to serve

Serve with beef or beans
