Veg Handi/Handi Subzi is one of famous Punjabi cusine delicacy.
Mix vegetables are simmer in onion spicy gravy and prepared in Handi(steel wide mouth vessel)
Steps

First grind masala paste..in mixer jar add & grind all mentioned ingredients for it. Finely chopped onion, keep aside. Chopped french beans, potato, cauliflower into big pieces. Mix chopped onion, all dry spices, cashewnuts with grinded masala paste.

In handi add 2 cup of water, keep for boiling. Add ghee into it. Add and mix onion and spices mixture in it.

Add and mix all chopped vegetables and salt. Cover with lid (with water) and cook on slow flame, in between stirring occasionally.(Add more water if necessary). It will take 30-35 mins for vegetables to fully cooked. Remove from flame.

Serve Hot Veg Handi/Handi Subzi with parathas.
