Ingredients

45 -50 mins
4 servings
  1. 100 gmgreen peas
  2. 100 gmcauliflower
  3. 100 gmpotato
  4. 50 gmfrench beans
  5. 1big onion
  6. 2 tbspghee
  7. 1/4 tspturmeric powder
  8. 1/2 tspgaram masala
  9. 1 tspcoriander- cummin seeds powder
  10. 1 tspred chilli powder
  11. 2 tbspcashewnuts pieces/ or 6-8 whole cashewnuts
  12. 2 cupswater
  13. to tasteSalt
  14. To grind : masala paste
  15. 2green chillies
  16. 1/2" ginger piece
  17. 2 tbspgrated fresh coconut
  18. 3garlic flakes
  19. To garnish :
  20. as neededFinely chopped fresh coriander leaves

Steps

45 -50 mins
  1. 1

    First grind masala paste..in mixer jar add & grind all mentioned ingredients for it. Finely chopped onion, keep aside. Chopped french beans, potato, cauliflower into big pieces. Mix chopped onion, all dry spices, cashewnuts with grinded masala paste.

    In handi add 2 cup of water, keep for boiling. Add ghee into it. Add and mix onion and spices mixture in it.

    Add and mix all chopped vegetables and salt. Cover with lid (with water) and cook on slow flame, in between stirring occasionally.(Add more water if necessary). It will take 30-35 mins for vegetables to fully cooked. Remove from flame.

    Serve Hot Veg Handi/Handi Subzi with parathas.
