To make masala for marination, mix 1 tbsp cumin-coriander seeds powder, 1/2 tsp raw mango powder, salt, red chilli powder, 1/2 tsp turmeric powder, 1 tsp garam masala, and 1 tbsp oil.

Coat the masala evenly over the brinjal slices.

Spread 1 cup semolina on a plate, add salt as per taste and mix well. Coat the brinjal slices with semolina.

Place the brinjal slices in a pan. Add some oil on the sides. Cover and let the brinjal cook on one side. Once cooked, flip the slices, cover and let the other side cook as well. Let the slices turn nice crispy and golden brown.

In a bowl mix 1 bowl chana jor, 1 cup chopped onion, 1 cup chopped tomatoes, 2 tbsp roasted peanuts, 1 tbsp chopped raw mango, 1 tbsp chopped coriander leaves, 1/2 tsp raw mango powder, 1 tsp black salt, 1/2 tsp cumin-coriander seeds powder, 1 tbsp red spicy chutney, 1 tsp green chutney and 2 tbsp nylon sev.

While serving place the fried brinjal slices on the plate and top it with the chana jor mixture, nylon sev, red chutney and green chutney. Serve.
