Grandma Lela’s cheese pastry bites

This was one of my grandma Lela’s signature everyday treats for us kids.

There is nothing healthy about this dish. But these ‘little breads’ - as we call them back home - are wonderfully flakey and crisp, and great even after a few days of sitting out, although they usually do t last that long. They are addictive too - very hard to stop at just a few. We used to sit with a bowl of these in front of tv watching cartoons, eating them like popcorn.

Grandma passed away nearly 15 years ago, but in the last few years my mum used her recipe to make these for my niece. We all live in different countries so my mum and my niece see each other only about twice a year. During my Easter visit, my niece asked me if I can please make these for her ‘as grandma does.’ Below is my first attempt.

They can be made in any quantity, broadly keeping to 1 : 1 : 1 ratio for flour, butter and cheese. Pumpkin and sesame seeds are my addition to the recipe. For a #glutenfree version I suggest using quinoa flour.

Ingredients

  1. 250 gflour
  2. 250 gsoft white cheese, like feta
  3. 250 gbutter
  4. 1egg
  5. salt
  6. Pumpkin seeds (optional)
  7. Sesame seeds (optional)

Steps

    Leave butter at room temperature to soften or melt it In a microwave. Crumble feta cheese.

    Combine butter, cheese and an egg in a bowl. Add salt if not using salty cheese (not needed if using feta). Add pumpkin seeds if you chose to use them. Add 1/2 of The flour and mix with a mixer. Kept adding flour until the mixture feels solid but still soft to touch. You may need a bit more than 250g because of the egg.

    With your hands, form the dough in a ball.

    Sprinkle the counter with flour and put the dough on it, mixing in with more flour if needed. Dust a rolling pin with the flour so it doesn’t stick to the dough. If you don’t have a rolling pin, you can just flatten the dough with your fingers.

    Roll the dough until it’s about 1 -1.5 cm in thickness. Using moulds, cut out the dough and lay the pieces on a tray covered with baking paper.

    It is also fun to play with various shapes - here is my niece using her play-dough moulds.

    Combine the cut offs with your hands and repeat the process until all the dough has been used up

    Lay the pieces on a baking tray leaving a bit of space between the them.

    You can brush the top of the pastries with milk or egg and / or sprinkle with sesame seeds.

    Pre-heat the oven to 200C / 220C or 390 F. Bake the pastries uncovered, not opening the oven until they start to be rosey and start smelling their delicious smell - typically 15-20 minutes, depending on the oven.

    Take out and let cool for 10 min, then put in a bowl and serve.
