Once I got pilau biryani packet by mistake but when I tried it it was liked by everyone. Later I thought of giving it a try with my own recipe i.e ghar kay masale and believe me it was a no fail. Now I've stopped buying it's packet and make it with this recipe.

Ingredients

  1. For Quorma
  2. 1 kgchicken
  3. 2 tbspGinger garlic paste
  4. 4-5green cardamom/elaichi
  5. 2black cardamom/bari elaichi
  6. 2medium sized cinnamon stick
  7. 5cloves/long
  8. 6-7black pepper/sabit kaali mirch
  9. 250 gmsyogurt
  10. Salt as per taste
  11. 1 tspred chilli powder/laal mirch
  12. 1/4 tspturmeric powder/haldi
  13. 1/2 tspdhaniya powder
  14. 1/2 tspgaram masla
  15. 1 tsppissa hua zeera
  16. 1/4 tspajwain
  17. 1 tspsugar
  18. Few drops of kewra essence
  19. 1/2-1 Coil
  20. For Rice
  21. 3 Crice
  22. 1 tspsiah zeera
  23. 2cinnamon stick
  24. 1black cardamom
  25. Salt
  26. For layering
  27. Orange food colour
  28. 1 Cbrown onion

Steps

  1. 1

    For Quorma: Heat oil in a pan and fry chicken with ginger garlic paste and whole spices until it changes colour.
    Add the remaining spices and cook for a while. Now add yogurt and 1 cup water. Let it cook at low flame until chicken is done. In the end add few drops of kewra essence. It's ready for layering.

    For Rice: Boil rice in the usual manner as you do for biryani.

    For layering: Add half a layer of rice cover it with qorma. Add 1/2 Cup of brown onion. Give the second layer of rice and cover with remaining brown onion and add food colour. Leave it for dum and enjoy.
    Serve it with green chilli raita.
