Halve and scoop avocados into a large bowl, discarding the pit and skin.

Mash avocados to desired consistency (I like mine a little chunky but you can leave them more intact, or even stick them in a food processor until smooth).

Squeeze lime juice into bowl (discard remaining fruit flesh unless you have other plans for it). Mix well.

Add diced onion (use whatever you prefer. Red onion is common, I use pearls) and finely minced garlic. Mix well.

Add seasonings, stirring one final time. Chill at least 1 hour to let flavors meld a bit. Serve with chips/veggies/etc to dip, or on sandwiches/burgers/etc as a condiment. Enjoy!
