Silver dollar pancakes with walnuts

In blender, combine flour, wheat germ, baking soda, salt, brown sugar, cinnamon, buttermilk and egg; blend 15 seconds. Scrape sides of blender; add walnuts. Blend until walnuts are chopped fine, but not too fine.

Put a few drops vegetable oil on large griddle; heat until hot. Pour batter onto griddle to make small pancakes. Cook each pancake 1 1/2 minutes or until golden brown on both sides. Serve with butter and maple syrup, if desired. Batter may be prepared a day in advance and stored, covered in refrigerator.
