LEFTOVERS!! My mom made a point to me the other day. She said ‘sherry, your shining moments are with your leftovers’ lol this time it was the leftovers AND veg that needed to be used before it went south. I tried it a little differently this time trying to get that really good charred taste you get from the Mongolian fry guy. This was not disappointing at all. ☺️I think the key things were having my ingredients prepped and ready, the iron skillet and the high heat. You need a good metal spatula that works well scraping also.

Ingredients

  1. sauce:
  2. 3 tbspsesame oil
  3. 1/4 cupsoy sauce
  4. 3 tbspbrown sugar
  5. 2 tbspvinegar
  6. to tastecrushed red pepper
  7. Pepper, onion and garlic powders
  8. Stir fry add Ins:
  9. as neededOlive oil
  10. 2 cupschopped leftover ham, I had a spiral ham, diced small
  11. 1carrot chopped small
  12. 1small can mushrooms, drained and dried with a paper towel. Chop them small. I prefer fresh but I had this already
  13. 1/2 bunchgreen onions, chopped and separated into the whites and the tops
  14. 2zucchini that were a little past their prime, quartered then thinly sliced
  15. 2eggs
  16. 4-5 cupsCooked rice

Steps

    Get your rice Cooked and ready to go.

  2. 2

    Prep everything and have it ready to go. First make the sauce. Put it all in a bowl and whisk.

    Next, start dicing your veg and ham. I put them in the order I did it.

    Crank the heat almost to high on a dry iron skillet. When you’re ready to start you can’t stop. In the screaming hot skillet add the Oil and the ham then go down the line and add and toss the veg. Let it start getting color. Clear a spot in the center of the skillet,add oil. Crack in the eggs and scramble. When eggs are mostly done toss everything together. Add the rice and combine. You’ll be scraping and flipping the whole time nearly.

    Finally, add the sauce. This sauce will caramelize in the hot skillet so keep it moving. After I got it combined well I pressed it down in the skillet for a few seconds with the spatula to get a little crust on bottom. I’d scrape and flip again and let it brown. Did this several times then killed the heat. Hindsight is 20/20...wish i would’ve had some egg rolls lol

I'm an army brat with a Cajun mother and an Irish dad. I'm married to the love of my life, David, and we have 2 daughters and 2 grandchildren. I've been a barber for 40 years. Im an old fashioned, old school cook and my recipes are basic. I change them up all the time.Since finding out I’m diabetic I’ve had to rearrange old habits. Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
