Ingredients

60 minutes
Serves 6 servings
  • 2cooked chicken breasts
  • As neededwater
  • 3bay leaves, a piece of onion, and a couple of garlic cloves
  • As neededsalt
  • 2.2 lbscorn tortillas (about 1 kg)
  • 1/2 headlettuce, finely shredded
  • 1/4onion, thinly sliced
  • As neededMexican crema (or sour cream)
  • To taste aged cheese (such as Cotija or Parmesan)
  • To taste salsa—green, red, guajillo, or chipotle
  • Enough oil for frying the flautas

Steps

60 minutes
  1. 1

    Cook the chicken breasts in enough water to cover them, along with the bay leaves, garlic, and onion, for about 40 minutes.

  2. 2

    Once the chicken is cooked, remove it and let it cool slightly. Reserve some of the cooking liquid in case you need it, as the chicken should stay juicy.

  3. 3

    Begin filling the tortillas with the chicken and roll them up tightly to make flautas. Arrange them on a plate so they don't open. Let them cool for about 30 minutes.

  4. 4

    Heat a skillet with plenty of oil and fry the flautas until they are golden and crispy. Remove and place on paper towels to drain excess oil.

  5. 5

    Serve as many flautas as desired, topped with lettuce, onion, crema, cheese, and your choice of salsa.

  6. 6

    Serve with refried beans on the side.

    Enjoy your meal.
