Ingredients

  • 10 cupswater
  • 7 cubeschicken bouillon
  • 4large russet potatoes (halved and sliced, skins on)
  • 1 lbItalian sausage
  • 1large white onion (diced)
  • 16 ozbag chopped kale (about 2/3 of the bag, shred and discard stems)
  • 1 cupheavy cream
  • 3/4 bagOscar Meyer bacon bits
  • Salt, pepper, garlic powder, crushed red pepper (season to taste)
  • Butter
  • Vegetable oil

Steps

  1. 1

    In large stockpot, add water, seasonings, potatoes and bouillon cubes. Cook on medium heat.

  2. 2

    Dice onions, add to ground sausage and sauté in oil and butter until sausage is browned. Add to stockpot when finished. Heat to boil, reduce heat to medium and simmer covered for 30 min.

  3. 3

    Add heavy cream and bacon, simmer for 10 min.
