Mango shrimp "stir fry"

Saute onion, garlic and mango until soft

Add soy sauce, lime juice and Siracha. Mix

Let cook until some liquid forms on the bottom of the pan

Add shrimp. Cook for 6-10 minutes on medium heat, stirring occasionally.

Add rice. Cook for another 5 minutes

Serve and top with coconut and scallions.
