Ingredients

4 dozens
  1. Filling:
  2. 500 gprawns, chopped into cubes
  3. 1/2 tspgreen ginger garlic paste
  4. 1/4 tsparomat
  5. 1/4 tsplemongrass powder
  6. 1/4 tspturmeric
  7. 1/4 tspchilli powder
  8. bunchLime leaves
  9. 4 tbspJoJo's Peri garlic sauce
  10. Zest of one lemon
  11. 1garlic clove, micorgrated
  12. to tasteFreshly ground black pepper
  13. Sprinklered chilli flakes
  14. 2 tbspgarlic parsley butter
  15. White sauce
  16. 2 tbspGarlic parsley butter
  17. 1 1/2 tbspflour
  18. 1 cupmilk
  19. 3 tbspNando's creamy garlic sauce
  20. 2 tbspJoJo's Peri garlic sauce

Steps

  1. 1

    Marinate prawns overnight in green ginger garlic paste, Aromat, lemongrass powder, turmeric, chilli powder, grounded black pepper, red chilli flakes JoJo's sauce, zest, lime leaves and garlic micorgrated

    Melt 2 tbsp garlic parsley butter and add the prawns

    Cook till water is released from prawns

  4. 4

    Remove prawns from pan into a separate bowl

    Add 2 tbsp more parsley butter and 1 1/2 tbsp flour to the liquid released from the prawns in the pan
    Whisk till no lumps remain and the mixture starts to foam

    Add 1 cup of milk and whisk till it thickens

    Add the prawns back to the pan with the white sauce (use a spoon now as white sauce should be smooth)

    Add Nando's sauce and JoJo's sauce

  9. 9

    Keep on the stove (on medium heat) for about 5-8 minutes to infuse with the prawns and reduce

    Let the mixture cool. As the mixture cools it will thicken up more

    Fill and paste moons

    Dip in egg then in Kellogg's crumbs. Deep fry until golden in frying oil.
