Collect all ingredients with 1 heaped cup rice a couples of times and soak for 30 mins. Then drain the water and pressure cook rice ¼ tsp salt,⅓ tsp oil and 2 cups of water for 2 to 3 whistles. 1 heaped cup rice will yield 3 to 4 cups rice,it's depends on the type & quality of rice. Remove the cooked rice in a plate.

In a fry pan,add 1or 2 tbsp oil,add mustard seeds and let them crackle.Once the seeds begin to crackle,add the urad daal,chana daal,curry leaves,dry red chilli and peanuts,saute for every thing on a low flame,so that the spices dont burn.

Now add the hing,turmeric powder.mix very well.stir and immediately pour the cooked rice into the mixture.mix well. Now add 1tbsp lemon rice into the rice covered for the flavors to blend for 3 to 4mins.

Lemon rice is ready for serve.
