Ingredients

20 mins
2-3 servings
  1. 520 gapproximately of Coley fillet
  2. 1/2red pepper, sliced thinly
  3. 1small onion, sliced thinly
  4. 2tomatoes, sliced thinly
  5. Handfulfresh parsley, chopped
  6. to tasteGround black pepper
  7. to tasteSalt
  8. Lemon juice to taste (I added about 2-3 tbsp on mine)
  9. 2-3 tbspolive oil

Steps

20 mins
  1. 1

    Preheat oven to 200 Celsius.

  2. 2

    Place a decent amount of foil big enough to wrap the fish on a baking tray.

  3. 3

    Next lay the fish skin side down. Season with salt and pepper. Next add the onions, tomatoes, peppers. Sprinkle the parsley, lemon juice and olive oil.

    Fold and seal the parcel. Transfer to oven and bake for 20-25 minutes.

    Let it rest for 5 minutes and serve.
