I often have items going out of date in the fridge. Soups are an easy way to use up all those items.

With the chicken stock, I recently boiled some chicken pieces and rather than throwing away the liquid I saved it and froze it,so that I can use in soups etc. It adds wonderful flavour.

Ingredients

30 mins
4 servings
  1. 6celery sticks including leaves, sliced
  2. 1chicken stock cube
  3. 1 tbspchopped mint
  4. 1 cupfrozen peas
  5. 4small carrots, sliced
  6. 600 mlwater
  7. to tastesalt
  8. 200 mlchicken stock
  9. 1onion chopped

Steps

30 mins
  1. 1

    In a cooking pot add all the ingredients. Bring to the heat and simmer over a medium heat for 15-20 minutes.

    Check seasoning is to your taste.

  3. 3

    Let it rest for 10 minutes before serving and enjoy.
