  2. 2 cupsbasmati rice

  4. sunflower oil
  5. 1chopped onion

  9. 4grated garlic cloves
  10. 1/2spicy green chili (optional)
  11. 2bay leaves
  12. 1 packetnatural saffron
  13. 1 teaspoonground cilantro
  14. 1/4 teaspoonhot paprika
  15. 1 teaspoonwhole cumin seeds
  16. 1 teaspoonground cumin
  17. 5black peppercorns
  18. 1cinnamon stick
  19. 1 teaspoonground or fresh grated ginger
  20. 1/4 teaspoonturmeric
  21. 5cardamom pods
  22. 5cloves
  23. 5.3 ozcrispy fried onions

    First, put half a cup of water in a small cup, mix in the contents of a packet of saffron, and set it aside for later.

    In a pot or pan, add a little oil and fry the cinnamon, cumin seeds, cloves, and peppercorns for about 20 seconds.

    Now add the onion, grated garlic, and spicy chili, and cook over medium heat. When it's halfway done, add the chicken.

    When the chicken is halfway cooked, add the yogurt, powdered spices, cilantro, fresh mint, and half of the fried onions, and finish cooking.

    Bring 8 cups of salted water to a boil, adding the bay leaves, cardamom, and a splash of oil.
