Ingredients

  1. 1 kgMutton cut into small pieces
  2. 4 largeOnions, finely chopped
  3. 2 tbspFresh pounded ginger
  4. 2 tbspfresh pounded garlic
  5. 3 cupYogurt
  6. 12Cloves
  7. 10Green Cardamoms
  8. 2Cinnamon stick
  9. 2 tspGround coriander
  10. 2 tspground cumin
  11. 1 tspground black pepper
  12. 1 tspcumin seeds
  13. 3 cupbasmati rice par boiled
  14. 3tomatoes, chopped
  15. 2green chilies chopped
  16. 1 tbspfresh coriander
  17. 1 tspkewra essence
  18. 4 tbspvegetable oil
  19. 1Salt
  20. 1Turmeric
  21. 1 tspRed chilly Powder
  22. 3Bay leaf
  23. 1 cuplukewarm milk
  24. 1/4 tspsaffron stands

Cooking Instructions

    Heat oil in a pressure cooker and add the chopped onions, and sauté them until they are well browned.

    Add mutton and fresh pounded ginger garlic and stir. Add 1/4 glass of water to the cooker and add yogurt, cloves, cinnamon, cardamom, bay leaf, red chilly powder, turmeric, salt, powdered - coriander, cumin and black pepper. Stir finally add cumin seeds and pressure the cooker until 3 whistles.

    After three whistles, add the chopped tomatoes, green chilies and coriander along with kewra essence to the curry and let it cook till the curry thickens a little.

    Color the par boiled rice now before putting it on dum along with the mutton like I did. Also add saffron strands to the lukewarm milk and stir well.

    After the curry thickens, put the cooker under a heavy bottomed pan and put the gas on its lowest flame. Add the rice on top of it, pour the milk saffron mixture over it and cover it first with a cloth and then with the plate and Dum for atleast 20 minutes.

    If you don't have a heavy bottomed pan then directly put the cooker on the lowest gas flame for 5 minutes.
