Fluffy masa

First of all the secret to a good masa is don’t allow it to over rise else you’ll end ip with flat and oily masa!!! Secondly I don’t want to hear okra in masa yes you’re not dreaming I said okra it works wonders it makes your masa full and prevent it fork collapsing when it cools down and from gtn oily

Soak the white rice over night or at least 8 hrs (I used basmati white rice it’s extra good and bright white)

Next day wash your rice throughly add 1/2 cup cooked rice, okra,and blend till very soft (don’t add too much water)

Next add your yeast, salt, sugar and mix. Then allow it to rise for at least one hour (secret number two don’t allow your batter to over rise if you really want a fluffy masa)

Next add your chopped onions baking powder and mix. You can add little amount of water if the batter is too thick

Add oil to your already hot masa pan and scoop the batter allow it to cook for at least 1/2 minute before flipping the next side.

I served mine with my delicious ultimate taushe soup, check for the recipe and taste the new flavor!
