Many of us would have tasted Sooji Upma , vermicelli Upma , Poha Upma , Puffed rice Upma but very few had even head about this Upma variety . Not all have the practise of cooking this broken rice Upma which is quiet popular among the Southies . This Upma is my all time favourite. I learnt this recipe from my late grandmother who was a pro at culinary skill. A very simple , budget friendly , tasty ,filling breakfast or dinner option . In Tamilnadu , broken rice Upma is called as Noi/kurunai Upma . #goldenapron #week9

Ingredients

  • 2 cupsBroken rice washed,soaked for 15 minutes
  • 2Onion medium sized finely chopped
  • 1 tablespoonMustard seeds
  • 1 tablespoonUrad dal
  • 2 tablespoonsChana dal or as preferred
  • 4 tablespoonsCooking oil
  • 2 tablespoonsGhee
  • 5-7Green chillies
  • 3Curry leaves sprigs
  • 1/2 teaspoonHing
  • 5 cupsWater measured or as per the quality of broken rice used
  • 2.5 teaspoonsSalt or as per taste

    Heat oil in a pan. Add mustard seeds in the hot oil and wait until they splutter. Next, add the urad dal.

    Add chana dal. Roast them in low heat until the dals turn golden and crisp. Throw in the green chillies and finely chopped curry leaves. Toss for 2 seconds.

    Add the onions and sauté until they turn translucent. At this stage, add the hing. Then the salt.

    Sauté the ingredients until they turn glossy and cooked. Now add the soaked broken rice. Gently toss the broken rice along with other ingredients until they look glossy.

    Now pour in the measured water. For this recipe, my Ratio is for 2 cups broken rice 5 cups water. Water measurement depends on the quality of the broken rice used. Mix all the ingredients before closing the pan. Close the pan and cook for 12 to 15 minutes in low to medium heat.

    Once done, when the broken rice is completely cooked, add ghee and toss Upma gently from bottom to up without mashing the Upma. Broken rice Upma is ready. So flavorful and yummy. Quick lunchbox recipe that comes handy on busy / tiring days.
