Ingredients

  1. 2.2 lbscooked chickpeas (about 1 kg)
  2. Fried pita bread—use as much as you like
  3. For the sauce:
  4. 1.1 lbsmusabaha (about 500 grams; or use extra cooked chickpeas blended with tahini and lemon juice)
  5. 1 cupplain yogurt (about 240 ml)
  6. 1/2 cuptahini (about 120 ml)
  7. 4 clovesgarlic, crushed
  8. 1/4 cuplemon juice (about 60 ml), salt, 1/2 cup chickpea cooking water (about 120 ml)
  9. 1/2 cupclarified butter or ghee (about 120 ml)
  10. Nuts for garnish (like pine nuts or almonds), chopped parsley, diced tomato, spices

Steps

  1. 1

    Spread the fried pita bread in a Pyrex dish or a large bowl.

  2. 2

    Pour the chickpea cooking water over the bread to soak it, then drain any excess water. Sprinkle a little salt over the bread, then add the cooked chickpeas evenly on top.

  3. 3

    Make the sauce by mixing all the sauce ingredients well. Pour the sauce over the chickpeas, then sprinkle with spices and red pepper powder. Garnish with parsley and diced tomato.

    Heat the clarified butter or ghee in a pan, then pour it hot over the top of the fatteh. You can also add fried nuts on top if you like. Enjoy!
