Wash mangoes,cut in 4 pieces,dry under fan for an hour

Now heat oil add fenugreek,fennel,cumin,carom, hing

Add mangoes and salt,chilli,turmeric

Mix it and cook for 5 minutes,no need to cook completely

Now cool it

Fill a glass jar,pour oil,do not uncovered any piece with oil,otherwise fungi can spoil the pickle.
