Ingredients

  • Gramflour (besan) - 4 to 5 cups
  • Potatoes - 4 large sized (pealed and cut in to thin slices)
  • Onions - 2 large sized
  • Green chilli - 4 to 5 chopped
  • Tomatoes in can - 1 Can
  • 1 tspRed chilli powder
  • 1 tspAll spices (garam masala)
  • 1 1/2 tspSalt
  • 1 tspCumin seeds
  • 1 1/2 tspCoriander powder
  • Fenugreek leaves 7 to 8 tbsp
  • Oil half ltr
  • 1/2 tspCumin powder
  • Alo Pakore
  • 4large potatoes 2 cups oil (for frying)
  • For the Batter 1 cup besan (chickpea flour) 1/2 cup water
  • 1 teaspoonred chili powder
  • 2 teaspoonscumin powder
  • 2 tablespoonssalt
  • 3 inchescrushed ginger
  • chopped coriander

Steps

    1: To prepare the batter, in a bowl add the onions, potatoes and fenugreek leaves, cumin powder, coriander powder, salt, all spices (garam masala), red chilli powder, gram flour and the canned tomatoes. Mix well.
    2: If the batter is still dry, add tiny bit of water and keep mixing and checking the texture of the batter.

    In a deep pan, add enough oil and make it hot. Taking table spoons of the batter, add them in the pan turn by turn. Make sure each table spoon that you add in the pan does not over lap the previously added table spoon of pakora.
    4: Cook the pakoras till each side is dark brown and fully cooked. Serve with ketchup or chutney.

    Alo pakore: 1.Add water to the Besan.
    2.Besan has a tendency to be very clumpy, so you should add just a few tablespoons at a time to keep the batter smooth.
    3.Add the Chilli powder, cumin powder, garlic, ginger, salt and chopped coriander and stir the batter.
    4.The potatoes should be sliced very thinly.
    5.No thicker than 1/4 of an inch.
    6.At this point test one slice of potato in the batter.
    7.There should just be a thin coat of batter.
    8.Heat the oil in a pan.

    9.Use a larger frying pan so that you have more surface area.
    10.The oil doesn't need to be too deep since the potato slices are very thin.
    11.Dip the potato slices in the batter and fry them till they are golden brown.
    12.Remove them from the oil with a slotted spoon and set them on a paper towel for a minute to soak up the excess oil.
