Spicy Yam Pakora

Yam pakora is a cooked yam covered in spicy layer made with flour. #ramadhancontest
The recipe story was:
After sharing the photos of my Ramadan online class meal on my whatsapp status, including this yam pakora, a friend after viewing, said:
"is this yam? It will really be helpful now that potato is expensive" .
I was full of symphathy after hearing her quote and i decided to pick up the recipe from my online class recipes and share it here as a giveaway.
Yam pakora is simple and delicious. That minty touch of the flour layer gives it a different taste. As i always say, flour taste great when mix with spices and seasonings. And most northern nigerian women enjoy that spicy touch of flour in savory recipes, more than sweet treats made with flour.
It would be suitable for iftar, with a sauce and a drink aside.

Boil yam and cut into slices. About ½ inch thick.

Here is a different shape. Cut it into desired shapes

Place flour in a bowl. Set the spices: curry powder, chilli powder, dried mint leaves, seasoning

Combine the flour with the spices. Mix well.

Create a well at the center, add egg

Add chicken stock or water

Whisk. The consistency of the batter should be quite thick. If the batter is too thin, it will not coat the yam properly.

Add the sliced yam

Dip the yam in the batter

Heat oil in a wide pan. Take the coated yam from the batter using a fork. Place it in the hot oil

Fry both sides till golden brown

Transfer yam pakora to a colander in order to sieve out the oil

And finally transfer it to a kitchen towel. The kitchen towel will soak out the excess oil from the pakora, if any.

Serve with any sauce of choice and a drink. I served mine with sauted liver sauce. Enjoy.
