Wash the quinoa very well (I let it soak for 30 minutes) and then cook using the absorption method adding the stock cube to the water. Allow the quinoa to cool completely.

Quarter the cherry tomatoes.

Finely slice the spring onion and the parsley.
- 4
Combine the quinoa, tomatoes, spring onion and parsley with the lemon juice, olive onion oil and salt and pepper to taste.
