Ingredients: 1/4 ice Berg lettuce shredded; 1/2 cucumber diced; 1 avocado; 11 cherry tomotoes diced 🍅; 3 pickled beetroot diced; 2 cups sweet corn 🌽; 1 grated carrot; Handful grapes halved 🍇; Slice red onion very finely diced; 1 can kidney beans/chick peas; Feta cheese (to taste); 3 tbsp apple cider vinegar; 3 tbsp lemon juice; 1/2 tsp himalayan salt; 1/3 tsp black pepper; 4 tbsp honey 🍯; 1/3 tsp mustard paste

This salad is an explosion of flavour and can be enjoyed on it's own. Perfect to bring along to a gathering or barbeque to go with the meat. Forgot to add feta when I took this picture. 😔

Dressing
3 tbspapple cider vinegar
3 tbsplemon juice
1/2 tsphimalayan salt
1/3 tspblack pepper
4 tbsphoney 🍯
1/3 tspmustard paste

Prepare the salad and place into a bowl. Mix to ensure everything is evenly distributed.

Mix all the dressing ingredients together in a cup then pour over salad.
