Ricotta Rasmalai

Pour milk to a heavy bottom pan and boil. Reduce the flame to medium. Stir and prevent the milk from scorching the bottom.Now add sugar, chopped almond, condensed milk, cardomom powder and saffron to the milk.

While stirring continuously, boil until the milk thickness and reduces to half the quantity. Let cool completely chill it in the refrigerator.

For rasmalai :In a mixing bowl, combine the ricotta cheese with sugar and cardamom powder, Mix all of the ingredients really well.

Transfer the ricotta cheese mixture into the muffins cups. Now bake it at 200 degrees for 25 mins.

It will brown up in the sides and when you insert a toothpick it should be come out clean. Let them cool completely, before removing from the muffins cups.

Now place them in a dessert bowl. Now pour the cool milk(rabdi) in the dessert bowl over ricotta pieces. Garnish with chopped almonds and saffron.

Serve it chilled.
