This is a very common snack served with masala chai in most Gujarati households. It's my favourite snack, though I don't have it with chai. Ingredients

  • 1/4 cupmelted butter
  • 1 1/4 cupplain flour
  • 1/4 cupcorn flour
  • 1/4 tspcardamom powder
  • 1/4 cupmilk
  • 1/3 cupsugar
  • Oil for frying

Steps

    Combine butter and milk in a bowl and microwave it for 1 minute. Then add the sugar and mix it till the sugar dissolves.

    In a mixing bowl, add plain flour, corn flour and cardamom powder. To it, pour the wet ingredients mixture and knead into a soft dough. Cover the dough and let it rest for at least 30 minutes.

    Divide the dough into 4 equal size balls. Using a rolling pin, roll out each ball into 1/2"thick circle. Then using a sharp knife make horizontal and vertical cuts across the circle to form 1" square shapes.

    Fry the shakarpara in hot oil over a medium flame, so that they cook well without burning. Once they turn golden brown in colour, take them out of the oil and place them on a plate lined with kitchen towel, to drain any excess oil.

  5. 5

    Once they cool completely, store them in an airtight container. They can be served with masala chai.
