Being a huge fan of eggs, toast and veggies, this had to be #myfirstrecipe on Cookpad! It’s a quick five minutes recipe, loaded with nutrition, flavours and colors!

Cut thick horizontal rings of Bell peppers, remove the seeds and keep aside. The top and bottom chunks can be diced into small pieces. Heat a pan and smear with some oil.

Break eggs in a bowl. You can choose to skip the yolk(optional). Place the bell pepper rings on the hot pan. Press gently with a spatula

Divide the egg mixture and pour a little inside the ring. Top it with chopped bell pepper pieces, onions, salt and seasonings.

Let it cook on a slow flame. You can also cover the pan for a minute to ensure a cooked top. Flip carefully, turn the rings and cook the other side too. This is optional if you are not fond of a runny yolk.

Place the egg rings in a plate and serve with a crisp toast.
