Pound the cilantro roots, garlic, and shallots in a mortar until finely crushed.

Add the palm sugar to the mortar and mix well.

Add the ground pork and pound until the pork is well combined with the paste. Add the chili powder and fish sauce, and mix well in the mortar.

Heat a pan and add the oil for frying. Once the oil is hot, add the seasoned pork mixture. If it becomes too dry, add a little water.

Stir-fry until the pork is cooked through. Serve in a bowl with fresh vegetables. It's very delicious!

Alternatively, you can stir-fry the finished pork chili paste with rice and add an egg for another tasty option.
